The Holland international hit 12 runs off the last three balls to see the Eagles equal Leicestershire's 255 for six for the loss of eight wickets.
Both sides scored 93 runs off the final 10 overs of their innings but Essex seemed doomed as they went into the last over still needing 16.
But after the run-out of David Masters, ten Doeschate struck Dillon du Preez for six, four and two off the final three deliveries.
Jason Gallian (63) had got Essex off to a solid start in reply after Matthew Boyce (59), Paul Nixon (55) and Boeta Dippenaar (50) struck half-centuries for the Foxes.
